Ingredients
The cake
- 200g of dark chocolate
- 6 eggs at room temperature
- 310g raw/ rapadura sugar
- 150g blanched organic almond meal
- 1 tsp freshly ground coffee
- 1/4 cup icing sugar
- 1/4 cup cocoa powder
Frosting/Icing (Optional suggestions)
Chocolate cream frosting
- 2 ripe avocados
- 1/4 cup organic cocoa or cacao powder
- 1/4 cup organic honey
- a pinch of sea salt
- 1 tsp vanilla bean paste.
Chocolate fudge sauce
- 1 heaped tbs. of macadamia nut butter
- 1 tsp. of organic honey
- 1 tsp. organic cocoa powder
- 2 – 3 tbs hot water
Instructions
Making the cake.
- Line a spring form cake tin with baking/parchment paper.
- Preheat oven to 180 C.
- Break up and melt the dark chocolate in a double boiler or microwave.
- Separate 5 eggs. Whisk together the egg yolks with 1 whole egg.
- Add the sugar and combine until the mixture is creamy.
- In a separate bowl, whisk the 5 egg whites until stiff peaks form.
- Add the almond meal, ground coffee & melted chocolate to the egg yolk and sugar mixture. Combine well all ingredients
- Gently fold in the egg whites and pour mixture into the lined spring-form tin.
- Bake for 1 hour until skewer comes out clean.
- After 40 minutes check If the cake looks to be turning too dark, cover with foil if required
- Take out of oven and leave on wire rack to cool in tin for 10 mins.
- When cooled remove from tin and put the cocoa powder & icing sugar into a sieve and sprinkle on top or choose your own frosting.
Chocolate cream frosting.
Chocolate fudge sauce.
Mix all ingredients in a food processor until smooth and creamy. Add a little splash of water for a smoother and fluffier consistency.
Chocolate fudge sauce.
Combine all ingredients into a smooth chocolate fudgy syrup. Drizzle over the cake and enjoy.
