Description

A rich dark organic chocolate cake that is also gluten free

Ingredients

The cake

  • 200g of dark chocolate
  • 6 eggs at room temperature
  • 310g raw/ rapadura  sugar
  • 150g blanched organic almond meal
  • 1 tsp freshly ground coffee 
  • 1/4 cup icing sugar
  • 1/4 cup cocoa powder

Frosting/Icing (Optional suggestions)

 Chocolate cream frosting

  • 2 ripe avocados
  • 1/4 cup organic cocoa or cacao powder
  • 1/4 cup organic honey
  • a pinch of sea salt
  • 1 tsp vanilla bean paste. 

Chocolate fudge sauce 

  • 1 heaped tbs. of macadamia nut butter 
  •  1 tsp. of organic honey  
  • 1 tsp. organic cocoa powder
  •  2 – 3 tbs hot water

 

 

Instructions

Making the cake.

  1. Line a spring form cake tin with baking/parchment paper.
  2. Preheat oven to 180 C.
  3. Break up and melt the dark chocolate in a double boiler or microwave.
  4. Separate 5 eggs. Whisk together the egg yolks with 1 whole egg.
  5. Add the sugar and combine until the mixture is creamy.
  6. In a separate bowl, whisk the 5 egg whites until stiff peaks form.
  7. Add the almond meal, ground coffee & melted chocolate to the egg yolk and sugar mixture. Combine well all ingredients
  8. Gently fold in the egg whites and pour mixture into the lined spring-form tin.
  9. Bake for 1 hour until skewer comes out clean.
  10. After 40 minutes check If the cake looks to be turning too dark, cover with foil if required
  11. Take out of oven and leave on wire rack to cool in tin for 10 mins.
  12. When cooled remove from tin and put the cocoa powder & icing sugar into a sieve and sprinkle on top or choose your own frosting.

Chocolate cream frosting.

Chocolate fudge sauce.

 Mix all ingredients in a food processor until smooth and creamy.  Add a little splash of water for a smoother and fluffier consistency.

Chocolate fudge sauce.

Combine all ingredients into a smooth chocolate fudgy syrup.  Drizzle over the cake and enjoy.
